I took a judgement call based on knowing your feelings on ham. No one told me. I have to wonder if, without even knowing you, you poltergeisted me during pregnancy. ProgenyE does not eat ham. Salt cured country ham seasoned green beans, yes. Ham as a meat course, no.

Love Beef Wellington...

You like Prime Rib? Scalloped potatoes or twice baked potatoes..Fresh asparagus, drizzled with a hint of lemon and herbs...Dusted with a lite, lite sprinkle of asiago cheese..
How about a nice shrimp cocktail, oysters Rockefeller for appetizers or spinach and bacon wrapped scalloped, with a nice red wine to sip?? Clams Casino go well with it too...Throw in a nice crab dip on some pumpernickel bread treats, squared, and your good to go..

I know may not sound that good but it truly is heaven as long as you have allowed your crab dip to chill properly...

SuperBowl cominggggggggggggggg we need recipes for great snack foods, that's why I put this in~~

My goodness, no AuntieE. Even I wouldn't stoop that low. Poltergeist indeed.

That is very enticing. However, with the price of mangoes hereabouts, I could almost treat myself to a 10-course dinner at a fine restaurant.

Roasted Red Potatoes

Freshly Ground vs. Pre-Ground Pepper
Original recipe makes 10 servings
5 pounds potatoes, cut into wedges
6 cloves garlic, minced
3/4 cup olive oil
1 cup water
1/4 cup fresh lemon juice
sea salt to taste
ground black pepper to taste
1 1/2 tablespoons dried oregano
1 teaspoon chopped fresh mint
1 (8 ounce) package crumbled feta cheese

Directions

Preheat an oven to 450 degrees F (230 degrees C). Lightly oil a large baking dish.
Stir the potatoes, garlic, olive oil, water, lemon juice, salt, and pepper together in a bowl until the potatoes are evenly coated; pour into the prepared baking dish.
Roast in the preheated oven until the potatoes begin to brown, about 40 minutes. Season the potatoes with the oregano and mint. If the dish appears dry, pour another 1/2 cup water into the dish. Return to the oven and bake about 40 minutes more. Top with the crumbled feta cheese to serve.

*You can reduce all measurements to suit your serving number to whatever you need...I mean, half of it, cute ingredients to half the amount, 1/4 of it, the same thing~etcetcetc...I've actually just made a little, being sure I used the ingredients and they are always great~

I remember them well. They grew profusely all over the place, and not always is someone's yard. I had a boyhood chum who's mother told me they were poisonous and wouldn't allow him to eat them. They were from damnyankee land and knew no better. I did convince him otherwise and he really enjoyed them. I don't know if he ever told his mother though.
