Roasted Portobello Mushrooms
Ingredients:
2 small portobello mushrooms
2 tablespoons balsamic vinegar

1. Marinate the mushrooms in the vinegar, soy sauce and garlic for 20 minutes.
2. Place the mushrooms and the marinade in a baking dish and cover with aluminum foil.
3. Bake in a preheated 400F oven for 30 minutes.
4. Flip the mushrooms and bake uncovered for 10 minutes.

Honey Dijon Dressing
Ingredients:
1 tablespoon honey
1 tablespoon grainy mustard
1 teaspoon dijon mustard
2 tablespoons olive oil
1 tablespoon red wine vinegar
1 clove garlic (grated)
salt and pepper to taste

Directions:1. Mix everything in a bowl. I prefer shallots to onions and sometimes cut up tomatoes to serve with it....

ok, very simple and delish~~

roasted chicken breast w/ mango salsa, roasted baby reds, broccoli w/ a nice white-cheddar cheese sauce.. -good stuff!

Mango Salsa
1 mango, peeled and diced
1/2 C peeled, diced cucumber
1 TBS finely chopped jalapeno
1/3 C diced red onion
1 TBS lime juice
1/3 C rough chopped -cilantro leaves
-Salt and pepper to taste..

Helloooooo saveamerica~you are welcome whenever-- dinner is typically around 6, dress casual and you need not bring anything......

That is very enticing. However, with the price of mangoes hereabouts, I could almost treat myself to a 10-course dinner at a fine restaurant.
