Why did the Creator give the Israelites the Torah thousands of years before the Koran was given to the Canaanites?

I believe you should ask Him..

Torah = Old Testament?
But I don't believe the Torah was given altogether in one go...
Was it not written over the course of centuries by various authors?
And then came the Gospels..
Is a further continuation not possible?

Why not start out with the Gospels?

I remind you I am not a Muslim...
These are just honest speculations...
I can freely admit that the Koran may be wrong... But that doesn't change the validity of a Muslim's belief...

And to clarify a bit as I follow ya'lls conversation. Christians and Jews believe the God they believe in is the true/only God. Those of Islam believe that Allah is the true/only God. Theologically, I don't see how the two "gods" can be the same.

Most biblical scholars believe that the old Testament was from the sixth century b.c., because no known Hebrew writing stretches back further.

The Koran was seventh century a.d...

Okay...but the God of Abraham is not Allah. If people see a resemblance it is superficial. There are deep, fundamental differences.
