Well now, I have been eating liver and onions all my married life. And that’s 50 plus years.
I and I can attest to the fact, I have never had it as good as my wife makes it. And no, she does not put it in the oven. No she does not roll it with corn meal.
I asked her if I could post it, and she was willing,
As long as I get feed back from you on how it tastes.
So hear goes
Recipe for ( Liver and Onions )
Use baby calves liver, about one pound.
One large yellow onion.
Three table spoons of Olive oil.
One cup of flower.
One half tes salt
One half tes pepper
One quart of water.
Take the liver pieces, you can cut them in half if you want. My wife doesn’t.
Cote them with the flower, both sides
Take Onion and cut in half.
In a large cast-iron skillet put in The olive oil,
Bring the oil to a high heat.
Lay in liver and sear both sides about 1 ½ min’s
After searing liver turn burner down to med.
Next put in the quart of water. The water should completely cover the liver about 1/2 to 3/4 inches.
Add the onion, add salt and pepper.
Cover pan and cook on med heat for about
35 to 40 min’s.
After about 20 min’s turn over liver.
Cook until done.
You will find the liver will never be dry, and there is no game taste to it.

PS By the way, mashed potatoes with brown gravy, and a well made dinner salad with garden peas and blue cheese dressing is as good as it gets.
We have a peach cobbler with fresh wiped cream after. Yum Yum.
