I always use beans,red kidney beans are good in chili. I won 1st place in a chili cooking contest for our county. I also use what they call a chili brick. It makes it thick and beefy.😋

I do like beans in chili but real chili does not have beans.

I remember years ago a restaurant where I lived in Painesville OH made chili with cubes of steak and no beans. I've never been a fan of beans unless it's ham and beans with lots of diced onions and tabasco sauce with corn bread. But I digress... the chili I described was the best I've ever had.

Have you ever made chili from beef flanken ribs Mr B. ?
They're also called short ribs.
This is what I make chili with now.
I guarantee if you try it you'll love it.
When those little short rib bones get soft , you can actually chew the marrow out of em'.
And it would be an insult to add beans to it.
I call it, carnivore chili.
