My Brothers and I swear by pecan, though others are acceptable...in particular, hickory and mesquite.

I like pecan smoked meat! I also like Applewood for pork.
Seems like us prairie dwellers are stuck with misquite mostly. I have 5 acres of the stuff!

Pecan remains our Family favorite, though. I had apple trees growing up so I mostly used that to smoke my venison, duck and trout. Worked great for me. I used hickory on occasion too. We had plenty of hickory trees around.
