Now, now...cabrito is very tasty, very tender also. I would recomend trying barbacoa if you ever get the chance Mmmmmmmm barbacoa, now that's eatin'

Seriously you say very tender, do you have to cook it forever to get it tender, like Venison?? I have had Bison and loved it... Fewer calories and less fat too......Had it in a restaurant while in Colorado last Christmas....

It is a unique flavor, it would be closest to pork in flavor and tenderness...with just a touch of wild game flavor, not enough to be a turn off, just a hint. It is slow roasted and then tossed on a mesquite fired grill to enhace the pigout please of smashing into a corn tortilla topped with onions, peppers and a splash of guacamolie...i always hit with some pico for a littlee heat.

The barbacoa is a whole cow head buried in mesquite or hickory coals till it is nice and tender, the the face meat is picked of....Mmmmmmmm, so tender and the beef flavor is second to none on any other cut, the meat patch right below the eye socket is my favorite pick...it is truly a great dish, the mescans in West tx would have these huge gatherings, and beer and barbacoa was the norm.

Holyyyyyyyyyyyyy smokessssssssssss~~(no pun intended there) Actually you do make it sound very good and tender..I love pork roasts, so if its similar,and I didn't know what it was I probably would like it..

Now the head, fanfriggintastic, or not, nope, not across these lips or into my mouth~~~ :lol: :lol: :lol: Although, again you do make it sound delicious.........

Are these delicacies the norm in Texas????

They are, we are a vast state as big as some countries, different dialects spoken from one end to the other...and i am right in the middle, the foods vary greatly on different corners, only thing that is a constant is BB-Q, and it differs from side to side...i will eat anything walk, crawl, swim, climb, burrow and fly...couple of exceptions, Menudo, chittlins, and something they call sweetbread ( cow belly lining) Food is my thing, a solid week in the kitchen is a vacation for me , i have yet to find something i cannot make....Hungry!!
