Students used to help with the harvest. That's why students have summer vacation.
Are they too smart to work?
I am retired today, but I used to work on farms after school. The land was beautiful. The pay was good. I also drove their busses as a 'straw boss' for extra pay and never missed a day. Many farms have Catholic day-school for the worker's children, housing, cooked meals, and medical care. It's all very modern.
