I spent a lot of time in a little town called Clay city Kentucky.--Grinding poverty there. A dry county where everyone was drunk. Fourteen was marrying age for girls and I saw a lot of teenage moms with 3 kids in tow. Most of the people worked in cigarette factories in nearby towns and ten year olds all carried a pack of smokes. I was introduced to fried snapping turtle with mashed taters and turtle gravy there. Good stuff I would not ever turn down.

I reckon the terrain in Kentucky had a lot to do with the birth of Bourbon. Mining used to be king, good water made good whiskey, whiskey was needed to be able to survive mining tolls on bodies.

The water around Clay city was mostly polluted from mining. This was nearly 50 years ago-- things may have changed.

That sounds like an interesting dish. I’d love to try it.

Rose, when you try to catch the snapping turtle be sure to grab centerline or a bit to the rear. They have longer necks than most people think. They can bite a finger off in one bite. Big ones can take a hand off.

It is prepared like fried chicken. it is very meaty--not at all fishy--more like a cross between pork and chicken--delicious.

I have stood on the backs of these turtles with a gaff in my hands---When they reach back to bite you just gaff them under the chin and pull their neck up about a foot or so and have a friend with a sharp knife cut their head off. The folks who I did this with lit a fire in the burn barrel and threw the head in since it would keep snapping and could injure a dog.

We used to catch and release small ones in a park growing up. We caught them by having them bite a stick. Lol. Thanks for the warning. I have a healthy respect for anything that can bite.
