Perhaps they could start with some simple recreations. Like the passenger pigeon. There used to be hundreds of millions in America and they were tasty. The last know one was stuffed and is in a museum. Start with extracting DNA from a feather. Or how about the dodo bird. Another recent extinction.
Or maybe work on animals that are about to go extinct because of man, like certain breeds of rhinoceros that are down to one or two left. Save the DNA and artificially breed with survivors of other related rhinoceros. The world does not need a recreation of a T. Rex at this time.

I hear they all taste as good as Spotted Owl, so I favor bringing back some of those extinct species.
