I like my Spinach...
Saute some Onion in Olive Oil and a bit of Bacon just to the Onions start to Caramelized.
Add washed Fresh Spinach after trimming the stems to a large cover pot.
Sweat the Spinach on very low heat, covered until it's Tender and Sweet.
