Gar is one of the most flaky white meat fish there is, very tasty. .....too hard to get the meat from them so nobody really messes with them for food here, like Counselor says.....they are a hoot to catch, you get them up around 3' and it's on for a good fight.

I've eaten them, good just hard to clean. Love when carp run up creek to the dam to spawn. What a fight on a reel, more fun bow fishin em. Most folks throw em on the bank. Used to know how to make like tuna salad from em. Good eatin with saltines on a creek bank at night running trot lines.
