One of life's great dilemmas has always been "what to serve?"...

Many of us love to indulge our snobbish sides and pig out on a tray of succulent sushi... Fresh cut slices of raw fish, lightly braised with a layer of soy sauce, and just a flutter of wusabi...

On the other hand, potato chips rock... Crispy, crunchy, greasy bits of heaven... Perfect for any occasion and always "fresh"...

So what does one do when hosting a sophisticated gathering for one's poker buddies?

Does one go the cheap way and set out a couple bowls of chips and dip? Or does one set up an elaborate se******n of raw fish on rice?

The embarrassment of setting a bowl of chips down on the table when one's poker buddies have already gotten their chopsticks ready is not easily lived down....(and may result in them refusing to pay their IOU's )...

Enter the Chinese... A culture always aware of the value of "face".... Always thinking outside of the box... Ensuring that a responsible host is ready for any situation that may arise...

I prefer my fish cooked, not a big fan of soy sauce and have never tried wusabi, I guess I'd have to say, give me the good old fashioned chips, you can keep the sushi chips.

Good for them, this is the way to bring China to her knees, good old American garbage food with an Asian twist. They will be portly and too sluggish to function in a generation.

I like to serve a tray of asparagus wrapped with prosciutto and with devilled eggs. Of course, there's always a snack tray with sliced cheeses and various c*****rs, chile con queso with sausage to go with corn chips and avocado dip. For a big party, stuffed jalapeno peppers wrapped with bacon (but we are talking about Texans).

Naturally, being a Texan, you had me at "stuffed chile con queso with sausage to go with corn chips and avocado dip," and "stuffed jalapeno peppers wrapped with bacon."

When & where, Iliamna I'm already in Texas.

( Getting to Florida would be a stretch. )

For many years after graduation from UT, there was a group of us that got together to watch the Longhorn football games on TV and I nearly always brought the cakes. I found cake molds, one shaped like a football helmet and the other like a football. I'd make white cakes with orange frosting and used a longhorn cookie cutter to put a white longhorn frosted area in the middle. We had a lot of fun. Now I live here in Florida and there aren't many longhorns around. 'Sigh'

Yep none of that fru fru stuff for me but I do like caviar. A casino up north of here has it at their buffet.

What? No meats for the c*****rs and cheese? I'm storming out and taking the chile con queso and the wrapped peppers with me, I'll need a snack on the way to the next event.

Would cerviche suffice? I make mine with a combination of shrimp and haddock. Would you stay then?

And by the way, prosciutto is Italian bacon, which is a meat.
