$1166.00 chickens

A little article in the news this morning caught my eye. The state of Illinois (which is about $1.00 from bankrupt) is spending 1166.00 each to fly in prairie chickens from Kansas. Because Illinois used to have vast prairies they think they should repopulate southern Illinois with prairie chickens. so they are bringing perhaps one hundred to Marion County hoping they will reproduce. Marion county is so overpopulated with coyotes that they are now in suburban areas eating people's pet dogs and cats. What is is going to cost the state to eliminate the coyotes so the prairie chickens can survive? A bankrupt state, run by Democrats of course, spending taxpayers money on chickens.

By the way when I Googled prairie chickens the listing also had receipes for roast and baked prairie chicken. I thought that was very funny.

They are good to eat ask the coyotes. We aren't allowed to use rifles in IL because the shoot to far. Trying to get close enough to a coyote to use a shotgun even with a rifled slug a major undertaking. And I suppose the EPA and PETA would object and democrats would back down.

I've heard that coyote is rather tough and stringy. But there is a way to marinate a rather tough piece of steak like chuck steak in whiskey that my daughter has tried and that came out good. Maybe we could try that and if all else fails throw out the coyote and just drink the whiskey.

My neighbor cooks a lot of things sou vid (spelling might be off) I think it is French style of cooking, but good anyhow. It is a very slow cooking method that required the thing to be cooked be put in a sealed bag immersed in water for up to 24 hours at 140 degrees. I think it takes about 16 hours for a leg of lamb for instance. and the goat leg he cooked took 20 hours, but it was GOOD and very tender.

I don't think I am up to eating a meat eating animal however, usually they are too strong tasting. however I do like smoked rattlesnake (gotta be some use for those d**m things. I prefer home made beer to whiskey anyhow, but you are welcome to the whiskey.
