Coos Bay Tom Loc: coos bay oregon

My recipe is simple and so I urge you keep it simple and you will love it. ------Slice up 4 lbs of yellow onions into onion rings-separate the rings. Make a layer of onion rings 2 inches deep in an oval roasting pan. Cut up a fryer-roll your pieces in flour and salt and pepper. Brown them in a pan with hot oil turning frequently for an even brown.--- Drain your chicken pieces then arrange them on top of the bed of onion rings in your oval roaster.---Bury the chicken with the remaining onion rings you will have. --- Put a lid on the roaster and place it in the oven at 325 degrees for 90 minutes. Serve with Mashed taters .gravy and corn.

I have a similar recipe... But add garlic and chili peppers to the mix... Also like to add about a 1/3 can of beer... Find that it makes for a more tender chicken...

Now I'm hungry...

Thanks Tom

Texan IOUs are quite worthless over here..

In Canuckistania we don't put up with that sort of thing...
You check your stick at the door and don't get it back til the IOUs are paid...
Alternatively there is an excellent 'installment' plan for the stick...
