Tuna Casserole

24-32 ounces of (hot from the oven) macaroni and cheese
1-2 cans of well drained water packed tuna
1/2 cup chopped celery
1/2 cup diced sweet red pepper
1/2 cup chopped mushrooms
1/2 cup corn
1/2 cup peas

Mix the last six ingredients with your oven hot macaroni and cheese. If need be, you can place it back in the oven to make sure it melds and warms thoroughly.

This is a good, inexpensive (at least, it used to be) dish. I had it quite often when young and watching our food budget.

It make a good way to stretch food.

As I make a LARGE quantity of macaroni and cheese, I take half to make this. I put it in serving size containers in the refrigerator and the guys can have it when they choose.
