You are correct. Our Cane corsos are like that. They are very sweet and docile. they have to be, they are trained therapy dogs. But when a 150 pound mastiff runs toward you and you are up to no good, YOU RUN. Then the dogs stop, shake their heads and saunter back to us. That is unless we say "Zeus, Tank come" then they are sitting in front of us before the command is finished. However like your shepherds, they are well bred, selected for temperament and well trained.
NPP, I love big dogs. I have been an english Mastiff owner for more than 30 years. The one I have now, (Bubba) is getting old. In fact he'll be 11 tomorrow. He's a lot slower than he used to be and not as heavy. We owned a restaurant / bar / casino before we retired, and Bubba would always lay at the end of the bar when I was working he was about 220 lbs. when he was in his prime. Of course he would get all the meat and egg scraps from the kitchen. He was OK with most people that came through the door, but occasionally someone would come in that made him growl very lowly and his hackles would stand up. I'd scratch his neck and tell him "good boy", But I knew to watch the guy that just came in. Bubba and most big dogs are a good judges of character.
