Comfort food for cold days - it's been in the teens, 20s and 30s here all week. Dang lying groundhog!
Small batch -
6 eggs,
half a pound of bacon
half head lettuce,
3 or 4 pounds of potatoes.
3/4 stick butter
Hard boil eggs, peel and cut into chunks.
Peel and cut up potatoes into 1-2" piece. Boil in separate larger pan (big enough to mix everything in).
Fry or microwave bacon until crisp.
Drain potatoes.
Melt 6T butter in potato pan. Shred lettuce into pan, crumble bacon and add to lettuce & melted butter. Add 1/4 to 1/2 c vinegar, cover and cook on low just until lettuce is slightly wilted.
Uncover, add potatoes and eggs.
Use potato masher to mix together. Add more vinegar and salt & pepper to taste.
