You might want to think twice about trivializing great beef by overcooking or adding flavors. The fires have killed a lot of cattle. Most of the numbers you hear were pregnant cows. Some of these guys had already trimmed their herds by seventy percent. Some have lost everything lock stock and barrel. The calves that won’t be born won’t affect the market for two years. If you love beef anywhere near as much as I do eat it now while you still can.

I second that I even once worked processesing horse radish roots in Malin if I remember right . I had to twist the roots in my hands to remove dirt and hair roots . Sprained both of my wrists doing it . lol Finished that job wearing ace bandages wrapped on my wrists .

Luckily for me I know some local growers . I have bought many cattle over the years .

I just remembered a horseradish root I had planted in my garden, and missed during that year’s harvest. I dug it up the second year and WOW, it was strong !!
