Boy does that look good! I do a pretty good chicken fried steak myself. The secret to the good coating is finely crushed saltine crackers. Because they're lighter in color they finish off with a beautiful tan to medium brown. Bread crumbs or a mistake because they start off tan or medium brown it have a tendency 2 over Brown or burn. And I find it the turn out the best when fried with olive oil as opposed to vegetable oil. Wienerschnitzel is always best when fried in olive oil also. I mastered both of these recipes, but it took a while. Oh by the way excellent post! I wish I could afford to travel. I would visit every restaurant and Diner that serves chicken fried steak.

I have found that using sirloin tips cut 3/8 of an inch across the grain, a spice mix of salt pepper garlic onion Sage thyme a little cayenne pepper and maybe a little bit of ground ginger. Mix your spices sprinkle on both sides of your cut meat, lightly pound in with a meat hammer, push into flower with the spices mixed into the flour also. Let sit for about 15 minutes. Push into the flour mix again. After it sets up a bit dip into the egg wash and then push into the crushed saltine crackers. Push crushed crackers into the meat once or twice more till it won't hold any more. Let's set a little bit maybe 10 minutes and then fry in olive oil. Serve with white pepper gravy and maybe biscuits on the side. Have a nice day!

I used to get a large sirloin steak and flour with salt and pepper both sides and fry both sides. With mashed potatoes and steak grave and green peas as a vegetable and you have some fine eaten. I don't like the chicken fried steak for some reason I really like the sirloin that way though.

I was raised on Chicken Fried Steak and never knew where it came from so when you posted here I started searching !

From what I found by googling Texas claims the origin but Oklahoma states their bid as origin , however Alabama wasn't mentioned doesn't mean it wasn't so !

Lamesa, the seat of Dawson County on the Texas South Plains, claims to be the birthplace of chicken fried steak, and hosts an annual celebration accordingly.

Chicken fried steak resembles the Austrian dish Wiener Schnitzel and the Italian-South American dish Milanesa, which is a tenderized veal or pork cutlet, coated with flour, eggs, and bread crumbs, and then fried. It is also similar to the recipe for Scottish collops

The Oxford English Dictionary's earliest attestation of the term "chicken-fried steak" is from a restaurant advertisement in the 19 June 1914 edition of the Colorado Springs Gazette newspaper

Chicken fried steak is among numerous popular dishes which make up the official state meal of Oklahoma,[5][6] added to the list in 1988
