Christmas Salad

Christmas Salad

I’m 73 years old and I do all my own cooking, from scratch. No frozen dinners or boxed meals.
I don’t use recipes, that takes the sport out of cooking. I am always experimenting with new things. I have never heard of making potato salad with sweet potatoes so yesterday I did.

I peeled sweet potatoes and cooked them in hot water. Remove them to drain and cool to room temperature.
Let the sweet potatoes cool so the vegetables will remain crisp.
I added: boiled eggs, thinly sliced celery, red onion and red bell pepper.
Apple cider vinegar, (The next time I will use dry red wine instead of the vinegar) sweet relish.
It turned out good and colorful. I think naming it “Christmas Salad” might be good.


I live in a place for senior citizens and everyone here likes my cooking. Today I gave my neighbor some of the salad and I told her that I experiment a lot and that if she seem healthy the day after I give her one of my experiments then I will try it.

My mother made hers with both white potatoes and sweet potatoes

Sounds good, I will give this a try. I don't know about the red wine though. The color might be unappetizing and the acid tang will be lacking. I make a cabbage slaw that goes by many names, Health Salad in NY Delis, No-Mayo Carolina slaw in the south and Clermont salad elswhere, among others. It uses purple and green cabbage but the color leaches out of the purple on the second day and it looks terrible. Tastes great but you can't eat with your eyes closed.
