There is a restaurant in NY city, called the Lunch Box. They have three eating challenges on their menu. One is an 8 lb sub. another one is a 151 once milk shake. Either of those is quite a challenge, but the third one is Hell on wheels.

They serve you a dish with eight chicken wings. Doesn't sound too bad, does it?

Oh. Did I mention they were hot wings? We're not talking your garden variety hot wings. These are made with several spices. One of them is ghost peppers. And they don't spare the sauce. It's rated at one million Scoville units, and you are required to wear rubber gloves and eye protection when you eat it.

You have ten minutes to eat all six wings. I think I could do it. Just six bites and I'm done. But it gets better. After you eat them, that's if you even can, they place a 52 oz ice cold milk in front of you, then make you wait ten minutes before you can drink it. 97 percent of those who try it fail.

What do you think? Anyone here live in or near NYC? Think you can beat the challenge?

I eat ghost peppers. I can eat a whole one if it's mixed up in a burrito or bowl of chili. But that's all I can take.

The strongest and hottest chili pepper in the world is the Carolina Reaper pepper. This pepper packs a punch with 2.2 million Scoville heat units.

Once you get over 50,000 unts it might as well be Triillions. My limit is about 15 to 20 thousand Scoville. After that it is just pain, no taste. Getting that high sometimes involves pain as well. My absolutely all time favorite sandwich is a kaiser roll stuffed with fried Italian Long Hot Peppers (Corniole) and a little salt, which have about 100 to 1000 scoville heat range.

All I can say is that the person who first thought of breeding peppers to make them hotter must have been a masochist.

Thse things grew wild in Mexico and there are many varieties which exist in narrow niches, we never hear of them because they are gathered and consumed locally. There is no large scale production of most varieties. Most of them are very hot. Exporting them all over the world gave the peppers new terroir and they adapt to the new conditions. Sometimes the new adaptation is insanely hot. The University of New Mexico maintains an agricultural research facility specifically for Chile Peppers; it is known as the Chile Institute. I sometimes buy specialty chile seeds from them such as Floral Gems variety chile..
