Curried Eggs...

Had dinner with a couple of Indian friends the other night... Pretty decent (considering there was no meat and the whiskey was pre-mixed with Coke )...

This was one of the dishes...

Ingredients:
8-12 eggs (2/ person)
Two cups of beans (red or black)(pre-boiled)
1-2 large tomatoes (diced)
One large onion (chopoed)
One head of garlic (chopped)
2-6 dried chili pepper's (depending how spicy you like it...Fresh chilis pack way more punch )
1 inch chunk of ginger
1 tsp of cumin
1 small stick of cinnamon
3-5 dried bay leaves
1-3 tsp of curry
2-4 cloves
A handful of fresh cilantro....chopped
1 tsp of salt
Black pepper to taste
Enough oil to cover the bottom of a large pot..
Plus oil for frying (enough to fry potatoes)

Eggs
Boil and peel the eggs...
Cut two or three shallow slices along the edges (this is important... Eggs explode ...Flying oil... Not cool )
Fry the eggs in a pan until the outsides are all browned.. Works best at high temps...But need to keep them moving...
Set aside for later...

Curry
In a large pot heat oil and stir in the onions, garlic, cumin, bay leaves, cloves and cinnamon sticks... Wait for the onions to turn soft...
In a blender blend the chili peppers, ginger, curry, salt and some water (maybe a cup)....
Add to the pot and stir...
Add the beans and tomatoes...
Bring to a boil then lower to a simmer...
Add the eggs and allow to cook for about thirty minutes to an hour.. (the longer the better for the eggs... a pressure cooker speeds things up)
Add water if a thinner sauce is desired...

When finished add the chopped cilantro and pepper to taste...

My friends say you can add chopped potato or grated eggplant to make a thicker sauce...


Goes well with naan bread and unsweetened yogurt...

That sounds nice... I like curried shrimp as well
