Lots of Arabs have that accent... Not sure that it is intentional...

I don't think it's accent as much as it is a tool she has discovered or was taught. It is a way of seeking approval for what is being said and hindering interruptions.
From Psychology today: "The response of the listener with a "yes" or "unhun" brought on by a upspeak allows the speaker to feel that they are including the other person in discussion instead of doing their own monologue. But the reality is that after going on for 10 minutes, no matter how many upspeaks you use, the listener will probably think you are full of yourself." Or, like me, the listener will conclude that the up-speaker is a Muppet!
