My employees slaughter our own meat. Cut wrap and freeze it. The Cajuns are experts on that along with.fish, crabs and aligator tails.

The 40 scres of Christmas trees we cut last December won't be replanted in trees but in corn and vegetables that will be canned. Sgt. major found out about the mormons canning their own food. The food will be in gallon size containers and later we will add 16 oz. cans.

He contacted the local mormons and they contacted the company that set up their operation. When the weather clears one of our large warehouses will be converted into a cannery temporarily until a proper building and freezer unit is installed then the warehouse will again be used as storage.

The next five years our income will be limited to 40 acres of Christmas trees and pine straw sales. With the price of food going up so fast we are being forced into growing and preserving our own food.

Another problem is the age of our employees. About half are 70 or older. There are very little or no homeless veteran's to hire and the local population can not supply enough workers to replace them.

Sgt. Major and I have discussed this on several occasions. We may have to sponsor immigrants as workers. Only married ones with or without children will be considered. We have been fortunate with the few we have sponsored. They are very good loyal employees now. They are all Republicans now.

I don't do the hiring anymore. The Sgt. Major is in charge of the employees now. I am busy with other expansion details.

There are no fruit trees and it would take to long for them to start producing fruit. Of the 240 acres of Christmas trees 100 acres will be planted in christmas trees the remaining 140 acres will be planted in corn and vegetables.

We need the corn to feed the horses, cattle, pigs and chickens and vegetables. It's all planned out over the next four years so incoming revenue will be used and no borrowing.
