This post is a fishing expedition.
I'm looking for an easy recipe/method for making single serving chicken, or turky pot pies to freeze for later.
We made tamales last year. Don't want to do it again.
We know people who are really good at it, and its worth the money to buy theirs.
I figure with the diversity on this site, I can get some good recipes.

I welcome any, and all. I like to cook, and I like good, simple comfort food. I'm no chef so go easy on me!

Believe it or not, I am a master of cream pies though.

Give me something good and I might share!!

The only recipe I know for any kind of bird is duck :P

I have found using torillas work good for crusts. The bottom one must be baked first. I use pyrex bowls. By pre-cooking white/dark meat chicken, broth thickened with corn starch and frozen veggy medley. I can bake a pretty good pie for 30 min @ 375.

The crust seems to be our biggest argument right now! I'm thinkin pie crust. She's thinkin cresant rolls, or wh**ever those damn biscuts are called. I'm thinking put it all together in foil bowls, and freeze.

I'm sure anything will work but I h**e soggy crusts. I make 12 at a time and they freeze just fine.

Frozen veggies. Oh, I think NOT! Try sliced celery, green pepper and microwave very briefly. Add some pimentos, fresh shelled peas and strip some white corn from the cob.

I forgot to say that you can get some really good meat pies using any kind of ground meat. The meat will need to be cooked slowly with leeks to make it's own savory gravy.
