A chicken idea. Any thoughts or suggestions?

We found some amazing horseradish cheddar cheese. So I'm thinking, pound some chicken boobs out flat, and put that cheese with asparagus in them, roll them up, and bake them. I'm not sure on the seasoning part though. Any ideas? It has to be pretty much sodium free. :hunf: :hunf:

Mrs Dash has a variety of sodium free seasonings

Archie - If you can accept a suggestion from this gay gourmet, I'd v**e for seasoning with thyme and lemon zest. Then dip them in egg white and coat with breadcrumbs (or better, panko - Japanese breadcrumbs) for a low-cholesterol crunchy outside. Sorry about the low sodium need - I love my salt! Beware with the asparagus - your pee will stink!

I was thinking more along the lines of fresh herbs.

Hmmm, I know a lot of people who are boobs and a few who are chickens, but I don't know any who are both. Besides, I thought cannibalism was frowned upon. The horseapple cheddar cheese sounds good though, could you maybe try it with poultry?

Well...that could maybe work. What do you think of doing that with some kind of meat from a bird??
BTW, the horseradish cheddar was one of the best finds I ever made!! A little pricey, but we deserve it. We work hard for our money!!

Yeah, bird meat would work, I think. You work hard for your money? You don't have to dance in a chair under a stream of water do you? That WOULD be hard work, especially in winter.

No dancing here!! Unless you count unattentive drivers.
Yes winter sucks!! I have said for the past 8 years, "I'm not doing this another winter. Here I am.
On the upside, that teacher who always yelled at me that nobody would ever pay me to sit there, and stare out the window was WRONG!!

My chest hurts from your flatting action. :-( :-( Skip the rolling stuff. Bread the flattened chicken breasts. Use cooking spray and cook the chicken three fourths through. Make a basic white sauce. Add the cheeses to the basic white sauce. Pour the sauce over, under and around the chicken. Cleans, slice and dice your asparagus and toss it into the chicken and sauce.

ProgenyE loves the horseradish cheddar on sandwiches. We are fortunate we have a local market who still keeps it reasonably priced.

Now that sounds pretty good. I'm just thinking out loud on this one. What fresh herbs?

Might I suggest a little Tarragon? I don't know where she went, but Tarra is definitely gone.

Between the cheese and asparagus , both being strong, I do not think you need anything. By the way, I never use milk, only, for basic white sauce. I use table cream or half and half in equal parts to the milk.

I'd try fresh parsley, green onions (chopped fine) and minced fresh garlic.
Where did you get the cheese and what brand is it? We love ALMOST any kind of cheese.
