1 box white cake mix
1/2 cup oil (Wesson works well)
1/2 whole milk
1/2 cup water
2 packages Royal Pistachio Pudding Mix (don't use generic pudding mix, they don't work as well)
5 eggs at room temperature
mix first 4 ingredients at medium speed in mixer for 2 to 3 minutes
Add one package of pudding mix and 2 eggs, mix until well blended. Mix second package of pudding mix and 3 eggs until well blended. Beat for 4 minutes.
Pour into well greased and lightly floured 10x 13 pan and bake at 350 degrees for one hour. When completely cooled, top with icing made with powdered sugar, a tsp vanilla and half and half. Let the icing on the cake firm up before cutting and serving.
