French Onion Soup

6 large sweet onions, sliced thinly
3 tablespoons butter (do not use margarine )
6 bouillon cubes dissolved in 6 cups water
1 1/2 tsp Worcestershire sauce
1/2 tsp salt
1/8 tsp freshly ground pepper
6 slices french bread or toast
1/3 cup parmesan cheese grated

Brown onions in butter until tender, add bouillon and seasonings.
add a peice of toasted bread in each bowl, and pour soup over it. Sprinkle cheese on toy right before serving

I prefer making the soup and putting it in the fridge for two days before reheating and serving. That brings out the onion flavors better.
You can reduce the water to 5 cups and add 1 cup white wine

One of UncleE’s favorite soups. I will have to try this recipe.

Vegetable-Cheese Soup
1/2 cup carrots, peeled and cut into thin slices
2 tsp salt
2 cups cubed potatoes
2/3 cup minced onion or chopped shallots
1/2 cup diced celery
1/2 medium green pepper
1/2 medium sweet red pepper
3 cups water
mix vegetables (except tomatoes) with the water and salt and pepper, bring to boil and then simmer for about 20 minutes until vegetables are tender
add cheese sauce and mix thoroughly then simmer for a couple of minutes then add 1 cup chopped tomatoes and simmer for a few minutes but not long enough to make the vegetables and tomatoes too soft so they loose their texture
makes 6 to 8 servings



sauce made with 2 tbsp butter, 2 tbsp flour
1/4 tsp salt
dash pepper
1 cup half and half or milk
beat flour into the other ingredients in the sauce then cook over low heat until smooth and bubbly

iI usually serve it with a grilled cheese and bacon sandwich. Be sure to cook the bacon half way and drain off the fat before putting it in the sandwich.
