Bishops Cake (Holiday Cake) aka Bishop’s Bread
Carpatho Russian Cookbook

This is the version of Bishop’s ‘Bread’ - Cake, which my wife, Jean made. It is the original recipe from the “Hunky” cookbook, (Mother & Daughters Club, Christ the Saviour Cathedral, Johnstown Pa.), given to her by Karen Potsko. The cookbook was one of those money raiser recipe collections from the church ladies. This recipe was worth the price of the whole book! Makes one loaf, recipe can be doubled easily.


3 large eggs well beaten
1 cup Sugar
1½ cups sifted All-Purpose flour
1½ tsp Baking Powder
¼ tsp salt
3½ Oz Chocolate Bits
2 Cups Chopped Walnuts (any nut you like)
1 cup Candied Cherries, chopped
1 cup Dates, pitted, chopped small pieces

· Preheat the oven to 325F.
· Combine the Eggs & Sugar, beat well.
· Sift the flour, baking powder and salt (dry ingredients) together and combine the flour mix with the Chocolate Bits, Nuts and Fruit. Mix well.
· Fold this mixture into the egg mixture.
· Line a small loaf pan (9” X 5”) with waxed paper. (No brown paper bags)
· Pour the batter into the lined pan and bake at 325F for 1½ hours. Test for doneness with a toothpick or skewer.

N.B
You can increase the chocolate to a little less than 5 Oz if you like. Do not add more than that or the cake will be a gummy mess.

Use a decent quality chocolate such as is made by Ghirardelli, Lindt, or Scharffen Berger (Hersheys)

This cake was usually made around the holidays when items like Walnuts, Candied Cherries, Dates, and Chocolate Bits were in our pantry for Christmas cookie making.
