Breakfast Casserole
2 1/2 cups seasoned/unseasoned croutons (cubed stuffing mix like Pepperidge Farm..not crumbs.
2 cups grated cheddar cheese
8 eggs
2 1/2 cups milk
2 lbs. sausage (1 hot, 1 mild works best)
1 can cream of mushroom soup
Cook sausage and drain fat. In 9 X 13 pan, combine croutons, cheese and sausage. Mix well. Beat the eggs with 2 cups of milk, then pour evenly over the dry mixture. Cover and refrigerate overnight. Combine 1/2 cup milk with 1 can cream of mushroom soup. Spread over the top and bake uncovered 1 hour @ 350 degrees.
