Happy Groundhog Day. Today in 1887 was the first time. Since 1887, the official groundhog has been named Punxsutawney Phil.

Braised in a good shiraz with plums and dried, not fresh, cranberries.

Slightly more musky, but similar. Also makes a great stew with wild onions and turnips, plus whatever other vegetables are handy. I like (uncooked) shredded lettuce on top of the broth.

If you can get a young one, they're pretty tender. Throw them in a cast iron skillet to sear them and then roast em or put em in a crock pot. Tasty!

I don't like the gamey taste, had version and couldn't eat it, yet another time had it in a stew and that was good...

I haven't had it in probably 20/25 years. I was 12 the first time I had it. My neighbor gave me a piece and I said this pretty good, what is it? I didn't believe him when he told me groundhog.
I hear raccoon is tasty to, but I ain't eating no damn raccoon.

A good man you are!!

My girlfriend made spaghetti, meatball and braggioli which I loved.. One time it had something I had not had, but did tell her it was good, until I found out it was tripe!! I had to excuse myself almost immediately to the bathroom to be sick...Think was power of suggestion?? Lolol...😂😃
